Fresh Berries And Figs With Honey And MascarponeThis was the luscious dessert D. and I enjoyed one weekend, after a light dinner of spinach salad with grilled shrimp and yogurt dressing (which I'll post later). It was an embarrassingly easy dessert to make. I found these fresh berries (strawberries, blueberries and blackberries) and fragrant ripe figs from Trader Joe's which I rinsed, patted dry and cut in half as needed. The mixed fruits were served in individual bowls, drizzled with good quality honey and topped with a generous spoonful of mascarpone cheese. Ahh, dessert doesn't get better than this. And quite healthy, too: mascarpone, which is similar to ricotta, is only 65 calories per spoonful. There are many variations on this classic combination. You can dust it with cocoa then top it with chopped nuts of your choice (I'm partial to pistachios). You can sprinkle it with freshly grated orange zest and whip the mascarpone with a bit of orange liqueur (I recommend Grand Marnier). You can also top it with freshly shaved semi-sweet chocolate (I recommend Vhalrona) and whip the mascarpone with a bit of frangelico (hazelnut liqueur) or amaretto (almond liqueur). The possibilities are endless; the results divine. Label(s): Food Technorati Tags:
